Raclette is both a Swiss cheese and a cherished culinary tradition. The cheese itself is semi-hard, creamy, and melts beautifully, making it perfect for a warm, comforting meal. The word "raclette" comes from the French verb racler, meaning "to scrape," which describes the way the melted cheese is served.
Traditionally, a half-wheel of Raclette cheese is heated, and the melted layer is scraped directly onto a plate of boiled potatoes. It’s often accompanied by pickles (cornichons), pearl onions, and cured meats such as ham or salami. Modern Raclette gatherings typically use an electric tabletop grill with individual pans, allowing everyone to melt their own portion and get creative with toppings like vegetables or bread.
Raclette is much more than a dish—it’s an experience. It brings people together around the table, encouraging connection, conversation, and a relaxed pace. Sharing raclette is all about warmth, coziness (Gemütlichkeit), and celebrating the joy of good food with loved ones. It’s a symbol of Swiss hospitality and the importance of savoring the moment.
When did the idea to experiment with Raclette around the world and recreate it with local products first come to life?
It all started when I was living abroad. As a proud patriot, I deeply missed certain Swiss products and dishes—especially cheese. The idea struck me during a hiking trip. Instead of the usual sandwiches for a picnic, I thought, why not boil a few potatoes at home, pack some Raclette cheese, and enjoy a freshly made Raclette with a cup of hot tea in the desert? It was simply perfect—a taste of home combined with the adventure of new surroundings!
